Despite the name, Tasso Ham is not made from the traditional hind leg of the pig—it is crafted from the pork shoulder, a cut prized for its rich flavor and marbling. We cure and cook our Tasso with a bold blend of spices, then slowly smoke it over Georgia pecan wood to create a deeply savory, aromatic ham with a touch of sweet heat.

Seasoned with brown sugar, toasted black pepper, clove, allspice, garlic, and Southern cayenne, our Tasso delivers layers of smoky, spicy, and slightly sweet flavor. It’s the perfect balance of heat and richness, making it a versatile ingredient for both classic Louisiana dishes and creative cooking.
